Right before my trip to Stockholm, I was invited to come along for the Branston BBQ workshop at the London Barbecue school. Branston is a brand I was introduced to ages ago, even before moving to England, where it’s a household name. They’re famous for their jarred pickled chutney called Pickle, and that’s the exact product my mom became obsessed with while living in the UK herself. It was always the first thing on her to-buy list when visiting London, and I remember us always having it in the fridge. When I was younger, it didn’t look too appetizing to me, so I actually hadn’t tried it up until a few years ago, but once I did, we bonded very quickly.

I now love having it on toast, topped off with a slice of Cheddar cheese, just like the Brits, but it had never crossed my mind to use it in marinades up until the workshop. What an awesome idea! We had quite a few different recipes over there waiting for us to try out. It was very hard to choose ‘the one’, but I eventually decided to go for the Tex-Mex Chicken Tacos, and they turned out delicious!

To prepare them for four people, you’ll first need four chicken breasts sliced in half. Then for the marinade, you mix 1 tbsp of small chunk Branston pickle, 1 tbsp of honey, 1 tbsp of soy sauce, 1 tbsp of olive oil, 1 tbsp of lime juice and grated rind of 1 lime. Once you have that ready, you can add the chicken and put the whole thing in the fridge for at least half an hour.

 

In the meantime, you can prepare the salad by mixing together 1 large choppped tomato, 3 chopped spring onions, 5 tbsp of kidney beans, 1 peeled and chopped avocado, lime juice from 1/2 of a lime, 1 tbsp of extra virgin olive oil and a hanful of fresh chopped coriander if you’re a fan.

 

Now, after you grill the chicken, all you have to do is chop it into strips, grab some taco shells and fill them with both chicken and salad. Quick and simple! And to make it even more delicious, you can sprinkle some grated cheese on top as well!

 

As I have said, there were more than plenty of recipes to choose from, so I have some homework to do and try them all, now that I have a cupboard full of amazing Branston products. I think this mushroom & grilled cheese burger muffin with their caramelised red onion relish will be next.
