I have another recipe for you guys! I’ve been baking some cupcakes on Sunday and was really surprised at how well they turned out. I was trying to make them for the first time a few years ago, and well, the whole thing ended up being a complete disaster, so I was a bit nervous about this second attempt. I’m so proud they weren’t gooey + burnt at the same time, which is something that happened last time… 😀
I got the original recipe here on bakingmad.com, where you can find lots of amazing recipes for cupcakes as well as for other things, but I had to make some changes to the recipe because I couldn’t find some of the ingredients at my local store. Instead of golden caster sugar I used plain white sugar and instead of white wine vinegar, I put in apple vinegar. Buttermilk was also nowhere to be found where I live, so I asked uncle Google to help me out. He suggested that I should mix a spoon of lemon juice with a cup of normal milk and let the mixture sit for 5 minutes. I was very worried that this wouldn’t work, but my cupcakes ended up being totally delicious, so don’t worry if you can’t find any buttermilk yourself.
P.S. If you’re a newbie when it comes to making cupcakes, you can also watch a video on how to make cupcakes on the bakingmad site.
